Since 1995 when he opened the 39-seat Metropolis Cafe and 1998 when he opened Aquitaine Bar á Vin Bistrot, Seth Woods has been steadily shaping his Aquitaine Group into a respected local operator of fine-casual restaurants. Growing his brand Woods took on his partners, Matthew Burns and Jeffrey Gates, who together own and operate Aquitaine Chestnut Hill ( 2000) , Aquitaine Dedham ( 2009), Gaslight Brasserie (2008), Union Bar & Grille (2003) and the lunch-only Cafe Green Light (2008).

Born in Ware, MA, Jarod Desroches’ passion for food was fostered by the farmlands of central Massachusetts and his family history. His great grandfather was a butcher, his uncle owned a bakery in town, his mother won the Betty Crocker award in high school, and his large family maintains a proud history of cooking and sharing recipes. Beginning his career washing dishes and bussing tables, he hungrily worked his way through his education at Johnson and Wales University in Providence, RI. His passion for cooking has continued to grow alongside his career, having spent years in the kitchens of the Breaker’s Hotel in Palm Beach, FL, Henrietta’s Table in Cambridge, MA, and the Harvard and University Clubs of Boston, among others. Desroches lives for the look on a person’s face when they love a meal he has created, and it is his great pleasure to be a part of the Aquitaine team.

Colleen joined the Aquitaine Group in 2012 as a member of Gaslight’s management team and later that year became part of the opening team of Cinquecento Roman Trattoria. She oversaw the wine and beverage program before becoming Cinquecento’s event coordinator.  She is now excited to get back into the dining room, and to share her love of wine, cocktails and (most of all) food with the guests as the new General Manager of Aquitaine Dedham.
